How to make everyday a festive treat with cashews

It is hard to imagine someone who wouldn’t like cashews. These creamy, crunchy, and smooth nuts not only add satisfy our snacky cravings but also add the dose of recommended good fats in our diet.

Often touted as a super food and symbolizing the aura of a festive times, the delicious treats made with cashews make an integral part of Indian festivals. Scrumptious desserts such as kaju katli, kheer, sewaiyaan, cashew chikkis and many such ingenious sweet items are incomplete without cashews. But who said that we are supposed to eat cashews only on festivals and happy occasions? Here are 3 simple recipes to help you celebrate life everyday with a treat using cashews.

Chocolate cashew clusters: This three-ingredient dessert can be an amazing munchie when you are longing for something sweet. To make these clusters all you need are cashews, melted chocolate and some coconut flakes. Now you can either use coconut flakes or sea salt depending on your preference to add some earthiness or saltiness in your cluster.

Simply, melt your chocolates until they reach the desired consistency, add roasted or raw cashews to the mixture and stir occasionally. Once the cashews are coated with chocolate, you can make the clusters on a baking sheet and allow them to harden at room temperature. Sprinkle some coconut flakes or sea salt and voila! the delicious chocolate cashew clusters are ready to pop in your mouth.

Spicy garlic cashews: For the folks who don’t have a sweet tooth and would rather have a savory snack, spicy garlic cashews will be the perfect munchies. This easy to make snack requires you to first prepare a seasoning powder mixing ¾ teaspoon garlic powder, 4 teaspoon onion powder, ½ teaspoon pepper and a sprinkle of sea-salt.  Once you have the mixture, add in 3 cups of cashews along with 2 teaspoons of lemon juice and keep this aside. Heat a pan with two tablespoons of ghee/olive oil on medium heat and add the seasoned cashew mixture to roast it for a couple of minutes. Once the cashews look slightly roasted, take them out on paper towels and cool them completely. You can eat these tasty bites in one go or store in an airtight container for the perfect snack to eat while binging Netflix.

Chicken/Tofu Cashew Salad: This recipe is probably one the easiest ways to add the crunchy and creamy texture of cashews in your palate.  Take a large bowl and add all your favorite salad ingredients namely thinly sliced green onions, cherry tomatoes, minced parsley, chopped celery or lettuce leaves. In this mixture add your desired quantity of cubed cooked chicken or tofu/paneer and top it with seasoning ingredients such as 1 teaspoon od lemon juice, ½ teaspoon salt, and ¼ teaspoon pepper. To add creaminess and balance the flavors, add ¼ cup sour cream and ½ cup mayonnaise to the salad and mix. Top the salad with some roasted cashews and indulge in the flavor burst in your mouth.
